Gourmet Vanilla Iced Coffee with Sweet Cinnamon

Is there a better treat than a mid-day ice coffee? Unless it’s a gin and tonic at 2pm kind of day then no… No there isn’t.


In our home, Burley and I usually make one pot of coffee in the morning, and then based on how the day goes (mass chaos or easy peasy), we may have time for 1 or 2 cups each. This means that there is usually anywhere from 2-4 cups of coffee that are left in the pot, not consumed. This always grates my nerves, because… Who wants to waste delicious coffee? In order to conserve, we started putting the remaining coffee in a pitcher in the fridge mid-day, and will treat ourselves to iced coffee from home! It feels like a delicacy to me, as an avid iced coffee drinker. This ritual has grown and expanded over time, and some times I find myself drinking some seriously fancy shmancy coffee these days… So today, I am sharing my favorite recipe to date.



1 Cup black coffee of choice

2 Tbsp organic cream

1 Tsp vanilla extract

1 Tbsp cinnamon simple syrup


Here is the easy play by play…


To make the simple syrup, you will want to bring 1 cup water, 1 cup sugar, and 1 stick of cinnamon to a boil. This recipe can be scaled and stored in a glass container in your fridge for 2 – 4 weeks. Hint… You can also use it in cocktails or tea, so do yourself a favor and make enough to keep on hand.

Bring your fresh brewed, strong coffee to at least room temp, but preferably stick it in the fridge to get it nice and chilled.
Once your coffee is chilled, fill a cup half way with ice. Pour a cup of coffee over the ice. Add the simple syrup and vanilla extract, and stir really well. Finally, top with your organic cream (half and half also works, but cream makes it a REALLY rich delicious treat).


Now… Sit back… Relax… and get caffeinated!
